Risotto is one of those old-time comfort foods that I grew up on.  It was prepared by my Northern Italian grandfather who was so fussy about how it was made that he didn’t trust anyone to get it right except himself.  My mother’s sister, my aunt, watched him carefully as he made the risotto in a big copper kettle, and after my grandfather passed on, she was the keeper of the “secret” of how to make a good risotto. And she was the one who continued the tradition of making it for us.

By watching my aunt make this simple rice dish I too learned how to make a “good” risotto.  Without a lot of details here, let me just say it required lots of stirring, and adding the hot chicken broth in small amounts until it was absorbed, then adding a little more, and so on…. Risotto also needed to be flavored with saffron which gave the rice a light yellow color, and enticing aroma and flavor.

Although we all loved risotto, it was not made frequently, because it was labor intensive beginning with stewing a whole chicken to get the rich broth needed to cook the rice.  All the meat was saved and stirred into the rice at the end of its cooking time, making this dish very filling and hearty.   My Dad particularly loved my aunt’s rice,  rather unusual for a Swede, but you can’t account for a person’s taste, and like him, I love it too.

With this back story in mind, you can imagine my delight when I came across this recipe for risotto, baked in the oven, and no lengthy stirring required.  Well, I was all over that recipe like flies on a dead pig!!

I made it for the first time this week.   Mr. D. thought it was marvelous and I thought it was great, too.  The addition of broccoli that is roasted in the oven while the rice bakes, then added in at the end with cheddar cheese, produces a tasty, cheesy and filling main dish. I treated it as a side dish, and served it with sliced ham.   Not quite the same as the risotto I remember, but certainly a rendition that I plan to make again.

Times and cooking methods change.  More and more of the old ethnic dishes are being modernized and fused with new ingredients, so that what was once old is new again.  I, for one, like this trend.

BROCCOLI-CHEDDAR OVEN RISOTTO

Yield:    Serves 4

Ingredients:

  • 4 cups low-sodium chicken broth (use vegetable broth for a vegetarian version)
  • 1 bunch broccoli, cut into small florets
  • 1 Tbsp. extra virgin olive oil
  • 3 Tbsp. unsalted butter, divided
  • 1/2 small onion, chopped
  • 1 3/4 cups arborio rice
  • 1/4 cup white wine
  • Kosher salt and black pepper
  • 1 cup grated sharp cheddar cheese (about 4 oz.)

Directions:

1.  Position oven racks in the upper and lower thirds of the oven and preheat to 425*F.    Bring chicken broth to a low simmer in a saucepan.

2.  Melt 2 Tbsp. butter in a large Dutch oven or ovenproof pot over medium-high heat.  Add the onion and cook, stirring occasionally, until slightly softened, about 2 minutes.

Pour in the wine and cook until evaporated, about 1 minute.  Add the hot both, 3/4 tsp. salt, and pepper to taste;  bring to a boil.

3.  Cover the pot and set on the bottom oven rack.  Place the broccoli on the upper rack.  Bake, stirring the rice and broccoli once halfway through cooking, until most of the liquid has been absorbed in the rice and the broccoli is tender, 20 to 25 minutes.

4.  Remove the rice and broccoli from the oven.  Add 3/4 cup hot water, the remaining 1 Tbsp. butter, and the cheese to the rice and stir until creamy (add a little more hot water to loosen, if necessary).  Stir in the broccoli.

This is one of my favorite salads to bring to a pot-luck meal.  I always come home with an empty bowl, and get lots of requests for the recipe.  I have been making this salad for a long time and don’t remember where I learned to make it. These days I pretty much make it from memory.  It’s that easy.

Basically it consists of raw broccoli and sliced celery combined with green grapes, and golden raisins.  I also like to add some salted sunflower seeds for additional texture.  The dressing is made up of mayonnaise and yogurt, or sour cream, with some sugar added and white vinegar.  As you can imagine there’s lots of “crunch” to it provided by the broccoli and celery, and that is off-set by the sweetness and juiciness of grapes and raisins.

Everyone seems to love it, even children.  Probably because of the sweetness.  So for anyone needing a way to introduce more vegetables into their diet, this salad, I believe, is a good place to start.

In my experience I find that the flavors blend better if you make the salad and refrigerate it at least an hour before you want to serve it.  It keeps well for a few days in the refrigerator if you should happen to have any left over. The amount of the individual ingredients is flexible, so  you can put in as much  of any ingredient as suits your taste.

  • 4 cups small broccoli florets
  • 1  1/2 cups seedless green grapes, halved
  • 1 cup sliced celery
  • 1 cup raisins
  • 1/4 cup salted sunflower seeds

  • 3 Tablespoons sugar
  • 1 Tablespoon white vinegar

Directions:

P.S.  If I’m really feeling “devil-ish”,  I cook up 3 – 4 slices of bacon, and crumble it into the salad as well.    Oh, Yeah!!

I really like to make stir-fries for several reasons:  they’re quick to cook, and they can be very nutritious with all the vegetables  you can add in to them.  Also they are a way to use up small amounts of ingredients you may have on hand, and you can vary the protein component every time you make it.

This week I made a stir-fry of predominantly broccoli and shrimp which are a popular duo.  But I also added scallions and carrots, all in a soy sauce base to round out this low-fat recipe.  Served over brown rice, it was quick, colorful, nutritious, and delicious, not to mention economical.   You can’t ask for better than that,  in my opinion.

STIR-FRIED SHRIMP AND BROCCOLI

Yield:  4 servings

Ingredients:

  • 1 pound fresh or frozen medium shrimp, peeled and deveined
  • 1/3 cup water
  • 1/4 cup soy low-sodium soy sauce
  • 2 Tbsp. rice vinegar or 1 Tbsp. cider vinegar
  • 1 Tbsp. cornstarch
  • 1  tsp. sugar, or 1 tsp. honey
  • 1 Tbsp. cooking oil
  • 2 cloves garlic, minced
  • 2 cups broccoli florets
  • 1 cup thinly bias-sliced carrot
  • 1/3 cup sliced scallions
  • 2 cups hot cooked rice, preferably, brown rice
  • 1/4 cup cashews or sliced almonds, optional

Directions:

1.  Thaw shrimp if frozen.  Peel and devein shrimp  Pat dry with paper towels.  Set aside.

2.  In a small bowl combine water, soy sauce, vinegar, cornstarch, and sugar; set aside

3.  Heat oil in a wok or a 12-inch skillet over medium-high heat.  Cook and stir garlic in hot oil for 15 seconds.  Add broccoli, carrot and scallions.  Cook and stir for 3 minutes.  Remove vegetables  from pan with a slotted spoon.

Lightly cook the broccoli and carrots and set aside.

4.  Stir soy sauce mixture.  Add to skillet; cook and stir until slightly thickened and bubbly.  Add shrimp; cook about 3 minutes or until shrimp are opaque.

Precook the shrimp and scallions and set aside.

Return vegetables to skillet; heat through.

Hoisin Barbecued Chicken and Broccoli

This holiday weekend is pretty well accepted as the start of the summer cook-out season, and we are no exception.  On Saturday we cooked out at home, and on Sunday we attended a family cookout.  After the parade today there will be another cookout.  Of course I always bring along a variety of goodies to these events.  This week I’ll be telling you about my contributions, but to start the week off I’d like to share with you this recipe for Hoisin Barbecued Chicken and Broccoli.

The flavors in this dish will remind you of Chinese takeout, but my goodness, so much better!.  But you’ll have to make it to believe it.  The Hoisin Barbecue Marinade is addictive, it will have you licking your fingers.  You may want to double it to serve as a dipping sauce on the side or to drizzle over some rice.  I’m sure it would also be delicious with grilled pork or shrimp.  The chicken cooks quickly because you pound boneless chicken breasts out to about 1/2-inch thickness.  In my version I used skinless, boneless thighs and just pounded them a little for uniform thickness.

HOISIN BARBECUED CHICKEN AND BROCCOLI

Yield:   Makes about 1 1/2 cup marinade,   serves 4

Ingredients for marinade:

  • 1/2 cup hoisin sauce
  • 1/4 cup barbecue sauce (any kind you like)
  • 2 Tablespoons low-sodium soy sauce
  • 2 Tablespoons rice vinegar
  • 2 teaspoons toasted sesame oil
  • 2 teaspoons grated fresh ginger
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 4  cups broccoli florets
  • 4 boneless, skinless chicken breasts, pounded to 1/2-inch thickness
  • 1 teaspoon toasted sesame seeds

1.  In a small bowl, combine all of the marinade ingredients and whisk to blend.

2.  Place the broccoli florets in a zip-top plastic bag and add 1/2 cup of the marinade.  Seal the bag, toss to coat, and set aside to marinate.  Place the chicken in another zip-top bag and pour in remaining marinade.  Seal the bag, toss to coat, and marinate at room temperature for about 15 minutes.

3.  Prepare a hot fire in your grill.  Spray a grill wok or other grill pan with cooking spray.

4.  Place the wok in the kitchen sink.  Pour the broccoli and sauce into the grill wok and let drain.  (You can reuse the marinade from the broccoli, if desired.)  Place the grill wok on a foil-lined baking sheet.  Remove the chicken from the marinade and place on the baking sheet beside the wok.  Discard the chicken marinade.  Take the baking sheet out to the grill.

5.  Place the wok on the grill and close the lid for about 2 minutes.  Open the grill and toss the broccoli with wooden paddles or tongs  several times while grilling, for a total of 12 – 15 minutes.   Place the chicken on the grill and cook for  2 1/2 to 3 minutes per side.

When everything is done, place the food on the baking sheet and bring into the kitchen to serve.

6.  Place broccoli in a bowl, sprinkle with the toasted sesame seeds and toss.  Arrange the chicken on a platter around the broccoli.  This meal is nice with a serving of lemon rice, or other kind of rice pilaf.

Herbed Chicken Parmesan

Sometimes I am in the mood for a comforting meal that’s filling and delicious, but don’t have a lot of time to prepare it.  I’m sure you have the same experience on many occasions. Well, I am alway on the look-out for easy to prepare, quick meals, and when I find ones that look interesting, I dog-ear the page, or tear out the clipping.  The problem with me is that I can’t remember where I saw it , or where I put the clipping.  I just remember enough to purchase the necessary ingredients,  and then go “where did I see  that recipe? or,” where did I put that clipping?”  I am developing a better system of recipe organization,  but that story will wait for another time!  This recipe meets all my requirements:  quick, easy, well-balanced, not very fancy, but just plain good.

For the pasta, I recommend Orzo, because it cooks quickly; and tastes good with some sauce over it.  To round out the meal add a vegetable like broccoli, which  also cooks quickly, and  looks great on the plate with the white pasta and red sauce.  A side salad would go well with this meal, but not really necessary.   I would, however, have a great white wine with it , like a Chardonnay!

Total time to prepare:  about 30 minutes.   Yield:  4 servings

  • 1/3 cup grated Parmesan cheese, divided
  • 1/4 cup dry breadcrumbs
  • 1 tablespoon minced parsley
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon salt, divided
  • 1 egg, lightly beaten
  • 1 pound chicken breast tenders
  • 1 tablespoon butter
  • 1 1/2 cups bottled tomato-basil pasta sauce, or better yet, your own homemade tomato sauce.
  • 2 teaspoons balsamic vinegar
  • 1/4 teaspoon black pepper
  • 1/3 cup shredded provolone cheese
  1. Combine 2 tablespoons of Parmesan, breadcrumbs, parsley, basil, and 1/8 teaspoon salt in a shallow dish.
  2. Place egg in another shallow dish.  Dip each chicken tender in egg, then dredge in bread-crumb mixture.
  3. Melt butter in a large non-stick skillet over medium-high heat.  Add chicken;  cook 3 minutes on each side or until done.  Set aside in the pan.
  4. Combine 1/8 teaspoon salt, pasta sauce, vinegar, and pepper in a microwave-safe bowl.  Cover with plastic wrap;  vent.  Microwave sauce mixture at HIGH for 2 minutes or until thoroughly heated.
  5. Preheat broiler.
  6. Pour the sauce over the chicken in the pan.  Sprinkle  evenly with the remaining Parmesan and all of the provolone cheese.  Wrap handle of pan with foil, and broil 2 minutes or until the cheese melts.

Eat Your Veggies

There are members of my family who are not particularly fond of vegetables, and they were going to be present at a family end-of-summer cookout.  I was asked to bring a salad.  Whenever this happens I try to bring one that includes vegetables in an appetizing, attractive form, hoping to entice them to eat their veggies.  This salad was a winner with everyone.  Once I placed it on the serving table it began to disappear very quickly so I didn’t get a good picture of the whole salad.  What you see here is the small amount that was left.     This is one salad  I know I will be making again and again.

Most people seem to like raw vegetables with a dip and my salad is a riff on that idea.  All the vegetables are raw plus there are cranberries for a little sweetness, peanuts for some extra crunch, and bacon for that smoky, salty taste.  For a vegetarian version, just omit the bacon.  The slightly sweet dressing pulls everything together and enhances it beautifully.

RAW VEGETABLE SALAD WITH CREAMY DRESSING

SERVES   10 – 12

INGREDIENTS–SALAD

  • 3 cups chopped raw broccoli
  • 3 cups chopped raw cauliflower
  • 3 cups chopped celery
  • 1 10 ounce package frozen peas, thawed
  • 1 cup dried cranberries, such as Craisins
  • 1 cup dry-roasted peanuts, or raw peanuts
  • 6 slices bacon, cooked and crumbled

INGREDIENTS–DRESSING

  • 1/4 cup sugar
  • 1 teaspoon salt
  • 1 Tablespoon white vinegar
  • 2 Tablespoons grated onion
  • 1/4 cup Parmesan cheese
  • 1 & 1/2 cup mayonnaise

TO ASSEMBLE

1.  Combine all the vegetables and cranberries in a large salad bowl.

2.  Whisk together all the ingredients for the dressing.

3.  Pour the dressing over the salad.  Add the bacon and peanuts.  Toss to coat with dressing.  Serve chilled.

Glazed Chicken and Szechuan Noodle Salad

Would you believe I have spent all summer (until now) without a gas grill?  How is that possible you might ask?  Ours simply refused to light when we took it out of storage in the Spring.  My husband took it all apart, cleaned all the parts, refurbished the burner with new parts, put it back together and it still wouldn’t work.  Dang!   So while everyone else was having their cookouts, or talking about the great foods they cooked on their grills I was feeling totally left out, not having anything to contribute to that conversation.

Last weekend we finally got a new grill, all in pieces, in a HUGE box.  The nice guys at the big orange store brought it out and put it in my car for me, but I was dreading the task of helping to put it together.  But surprise! it was so simple.  The directions were clear, made perfect sense. and all the screws were even pre-installed so we didn’t end up with any extra parts.  This grill is just like having a gas stove on my back deck instead of in my kitchen.   We celebrated the new grill and how smart we were to put it together by grilling a steak for dinner that evening.  It was a very good steak but not especially blog-worthy.  (I like that word.)

My post today is about my first real effort to cook something a little jazzier on the grill; Glazed Chicken Thighs.  Since the recipe for the chicken contained some ingredients found in Asian cuisines, I paired it with another recipe I had for Szechuan Noodle Salad, and also included Sesame Broccoli.  This, then, is my complete menu.  It can be prepared in about 30 minutes.  While the grill is heating coat the chicken in the glaze mixture.  Grill the chicken.  Keep the chicken warm in a low oven, and cook the noodles and steam the broccoli. Season the noodles and broccoli and serve.

GLAZED CHICKEN and SZECHUAN NOODLE SALAD with SESAME BROCCOLI

SERVINGS:    4

INGREDIENTS–CHICKEN

  • 1 Tablespoon grated peeled fresh ginger
  • 3 Tablespoons hoisin sauce
  • 1 teaspoon olive oil
  • 1 teaspoon lower-sodium soy sauce
  • 8 skinless, boneless chicken thighs (about 1 1/2 pounds)
  • cooking spray

INGREDIENTS–NOODLES

  • 6 ounces uncooked udon noodles (thick, fresh Japanese wheat noodles), or whole-wheat linguine
  • 1/4 cup bottled Szechuan sauce
  • 1 Tablespoon creamy peanut butter
  • 2 teaspoons lower-sodium soy sauce
  • 2 teaspoons fresh lime juice
  • 1 cup matchstick-cut carrots
  • 1/2 cup matchstick-cut green onions

INGREDIENTS–BROCCOLI

  • About 1 pound broccoli, trimmed and cut into florets
  • 1 Tablespoon sesame seeds
  • 1 Tablespoon dark sesame oil
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper

PREPARATION

1.  Preheat grill to medium-high heat.

2.  Combine fresh ginger, hoisin sauce, lime juice and olive oil in a large bowl.  Add chicken, toss to coat.

3.   Place chicken on grill rack coated with cooking spray.  Grill, about  4 minutes/side or until done.  Remove from grill, cover and keep warm.

The chicken could also be cooked indoors on an electric grill, or on the stove-top in a grill-pan.

4.  Cook noodles according to package directions.  Drain well.  Combine Szechuan sauce, peanut butter, soy sauce, and lime juice in a large bowl, stirring with a whisk.  Add noodles, carrots, and green onions; toss and serve with chicken.

5.  For the broccoli:  Add water to a saucepan to a depth to 1-inch.  Add broccoli florets, bring to a boil and simmer for 4-5 minutes until crisp-tender.  Place broccoli in a medium bowl.  Add the sesame oil and sesame seeds,  kosher salt and  black pepper. Toss well.

Ham and Broccoli Quiche

We have come to the end of our second week on a low carbohydrate diet, and I can tell you that Mr. D. has lost 4 lb. and I have lost 3 lb.  So we are continuing with this meal plan, but now we can begin to add a few more carbohydrates into each day’s meal plan.  On the weekend I made this quiche for a late breakfast/brunch.  It is very filling because of the quantity of ingredients, and we were satisfied enough by it  to not eat again until dinnertime.  I did make a few adjustments to lower the carbohydrate level as explained below.

Most quiche recipes call for a pie crust shell (as this one does), into which you layer your filling and egg mixtures.  I used 4  ( 8″ ) corn tortillas, to line my pie dish, overlapping them slightly on the bottom and extending them up the sides of the dish.  Corn tortillas are lower in total carbs than pie crust plus they provide a little fiber.   Also, instead of the 1 cup milk called for in the recipe I used 1/2 cup heavy cream and 1/2 cup water to make the 1 cup liquid needed.

This recipe makes 6 servings.

CRUST:

1 refrigerated Pie Crust from a 15 oz. package, softened at room temperature as directed on the package.  OR, substitute  4 ( 8″ ) corn tortillas.

FILLING:

  • 1 1/2 cup cooked, cubed ham
  • 6 oz. ( 1 1/2 cup ) shredded cheese of your choice
  • 1 cup broccoli florets, either precooked leftovers, or frozen ones, thawed
  • 4 eggs
  • 1 cup milk,  or 1/2 cup heavy cream and 1/2 cup water
  • 1/2 teaspoon salt
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon pepper

1.   Preheat oven to 375 degrees.  Make pie crust as directed on package for one-crust filled pie using a 9-inch glass pie pan. Or line pie pan with the corn tortillas.

2.   Layer ham, broccoli, and 1 cup of cheese in the crust-lined pan.  In a separate bowl whisk together the eggs and all the remaining ingredients. Combine well.  Pour over  what’s in the pan.

3.  Bake 35-45 minutes or until a knife inserted in the center comes out clean.  Sprinkle on the remaining 1/2 cup cheese.  Return to oven till cheese is melted.  Let stand about 10 minutes before serving as it will cut better.

Umami Shrimp and Vegetable Stir Fry

Have you been reading or hearing the word Umami a lot lately?  I have, and no, it does not mean an asian vegetable, fish or any other kind of food.  It is the “fifth taste”, say many food writers; to be added to salty, sweet, acidic and bitter.  Umami is a rich deep flavor such as that  of cooked mushrooms, for example, or aged cheese.  There is lots of umami in this dish what with the mushrooms, tamari and sesame oil.  The dish goes together very quickly, once you have the vegetables sliced and ready.  Purchase precooked shrimp from the market, and save even more time.

UMAMI SHRIMP AND VEGETABLE STIR FRY

  • 2 tablespoons vegetable oil
  • 8 oz. sliced mushrooms
  • 3 green onions, sliced
  • 1/2 cup chicken broth
  • 2 tablespoons tamari ( reduced sodium soy sauce)
  • 1 tablespoon sesame oil
  • dash pepper
  • 1/2 pound cooked shrimp
  • 1 small head broccoli  florets
  • cooked noodles
  1. Bring a large pot of water to boil.  Salt lightly and add raw broccoli.  Cook broccoli florets to crisp tender and remove with a skimmer to a plate.  Use the same water, and cook noodles as package directs.  As pictured here, I used Angel Hair pasta, but any thin pasta will do fine.
  2. While broccoli and pasta are cooking, heat 2 tablespoons vegetable oil in a wok or large shallow skillet, over high heat.  Add the mushrooms, stir-fry until lightly browned, about 3 minutes.
Transfer mushrooms to a plate.  Add more oil to pan, if needed.  Add the green onions, and stir-fry 1 minute.
Add the 1/2 cup chicken broth, tamari, sesame oil and  pepper to taste.  Heat to boil.  Stir in 1/2 pound  cooked shrimp and cooked broccoli, and reserved mushrooms.
Heat until hot.
Drain noodles, and serve with shrimp and vegetable mixture over the top.
